Ingredients

You'll need

  • Air fryer
  • Two shallow bowls
  • Tongs
  • Large plate or cutting board

Directions

Bread

  1. Pat the tenders dry and season lightly with salt and pepper.
  2. Put the beaten eggs in one shallow bowl and mix the breadcrumbs and panko in another.
  3. Heat the air fryer to 400°F.
  4. Dip each tender in egg, let the extra drip off, then press it firmly into the crumbs on all sides. Shake off the loose bits and set it on a plate.
  5. Spray both sides of every tender generously with oil.

Cook

  1. Lay the tenders in the basket in a single layer. Cook 5 to 6 minutes, flip, then 5 to 6 more, until golden and 165°F inside.
  2. Keep the first batch warm on a rack while the rest cook.
  3. Serve with lemon wedges and whatever dipping sauce you like.
Notes Leftovers keep 3 days in the fridge. Reheat at 375°F in the air fryer for 3 to 5 minutes; an oven or toaster oven also works. For gluten-free, use gluten-free crumbs and panko. Roughly 300 calories and 35 g protein per serving, give or take.

Breaded chicken is the air fryer's whole reason for being, and it still manages to go wrong in two predictable ways: pale, dusty coating or crumbs that slide off in one sheet. Both are easy to fix.

Crunch comes from the crumb and the oil

Regular breadcrumbs alone give you a fine, sandy crust. Panko gives you the jagged, shattery kind. Half and half is the sweet spot: enough fine crumbs to fill the gaps, enough panko to crunch.

Then there's the oil. A deep fryer browns breading because it's surrounded by fat. An air fryer is just hot wind, so without oil the crumbs dry out without ever turning golden. Spray until it looks damp, both sides, every tender. It feels like too much. It isn't.

Heads up

Don't stack or crowd them. Tenders that touch steam each other where they meet, and you get soft patches right where you'll grab them.

Keeping the coating on

Pat the chicken dry first, let the egg drip off, and press into the crumbs rather than rolling. And flip with tongs once, not four times.
