- One lavash, cut in half: one piece is the bottom, one is the lid.
- Build it right in the basket so you don't have to move it.
- 375°F to 400°F for 8 to 10 minutes; check halfway.
- Let it sit a minute before cutting. The filling is lava.

Directions
- Cut the lavash in half crosswise so you have two rectangles.
- Heat the air fryer to about 375°F if your model likes a preheat.
- Lay one half in the basket. Spread on the sauce, then the mozzarella, pepperoni and any other toppings.
- Set the second half on top and press down gently. Mist the top with spray for extra crisp.
- Air fry at 375°F to 400°F for 8 to 10 minutes, until golden and crisp and the cheese is melted. Check halfway; if the top is browning too fast, turn the heat down.
- Let it cool a minute or two before cutting.

Somewhere between a pizza, a quesadilla and the frozen pizza snacks everyone ate after school. Lavash is thin enough to crisp all the way through and sturdy enough to hold a real layer of cheese and pepperoni without tearing.
Why lavash
Lavash is a big, thin, soft flatbread, usually sold in rectangular sheets. It's thinner than a tortilla and it crisps more like a cracker. Cutting one sheet in half gives you two matching pieces, which is exactly what you want for a top and a bottom.
Build it directly in the basket. Assembled on the counter, it's floppy and tends to slide apart on the way in.
Heads up
The fan in some air fryers is strong enough to lift the top sheet. Pressing it down and a light mist of spray usually keep it in place. If not, set a small rack on top for the first few minutes.
Keep the filling light
It's a sealed pocket, so anything wet stays in there. Precook mushrooms, peppers and onions so they don't steam the lavash from the inside, and go easy on the sauce. A quarter cup is plenty.
Tip
If the top browns before the cheese melts, drop to 375°F and give it a couple more minutes. Lower and slower wins here.
