- Pre-crisp the tortilla for 1 to 2 minutes so the bottom doesn't go soggy.
- Then 400°F for 4 to 10 minutes depending on the tortilla.
- Start checking at 4 minutes. It goes fast.

Directions
Crisp the crust
- Heat the air fryer to 400°F.
- Put the plain tortilla in the basket and air fry 1 to 2 minutes, just until it starts to firm up. Take it out.
Top and cook
- Spread the sauce over the tortilla, leaving a thin border. Add the mozzarella, then the pepperoni.
- Put it back in the basket and cook at 400°F. Start checking at 4 minutes; it can take up to 10, until the cheese is bubbly and browned and the edge is crisp.
- Let it sit a minute or two, then cut into triangles or squares.

A tortilla isn't pizza dough, and nobody's pretending otherwise. But crisped properly, it's a thin, cracker-crisp crust that holds a real amount of cheese, and it's done in about the time it takes to find a plate.
The pre-crisp is the whole recipe
Put sauce on a raw tortilla and it soaks in, and the middle never gets crisp. A minute or two in the air fryer before anything goes on it dries the surface and sets it. After that the sauce sits on top instead of seeping in.
Don't let it go too long, though. You want it just firm, not brown. It still has another four to ten minutes ahead of it.
Heads up
The air fryer's fan can flip a bare tortilla or send pepperoni flying. If yours does, set a small metal trivet or rack on top for the pre-crisp, and press the toppings into the cheese.
Toppings, lightly
It's a thin crust, so it can't carry a pile. A single layer of pepperoni and a moderate hand with the sauce work best. Wet toppings like fresh tomato or raw mushrooms will undo the pre-crisp.
