- Toast the Texas toast mayo side down, on the coolest part of the griddle. Mayo instead of butter.
- Pop the yolk and fry the egg all the way through, so it doesn't run all over the sandwich.
- Lay the cheese on the egg right after the flip so it melts while the second side cooks.
- Be generous with the mayo. That's in the original recipe.

Directions
- Preheat the griddle to 375°F, and lay the bacon down while it heats.
- Flip the bacon every few minutes until it's cooked all the way through, then move it to a cooling rack.
- Put down a little oil, crack the egg onto it and pop the yolk.
- Flip the egg and cook the second side until it's fried all the way through. Lay the cheese on top right after the flip so it melts.
- Spread mayo on one side of each slice of Texas toast. Set them mayo side down on the coolest zone of the griddle and toast until golden.
- Take the bread off, spread more mayo on the toasted sides and sprinkle with everything bagel seasoning.
- Stack the bacon, egg and cheese, lettuce and tomato, top with the other slice, and eat.

A BLT is already one of the best sandwiches ever made. Put a fried egg and a slice of melted American cheese on it and it becomes breakfast, which means you can eat it at 9 a.m. without anybody asking questions.
Mayo on the outside
This is the move: instead of buttering the Texas toast, spread mayo on it and griddle it mayo side down. It browns more evenly than butter, it doesn't burn as fast, and it gives you a crisp, golden crust with a little tang. Then you put more mayo on the inside, because the recipe says "lots of it" and I stand by that.
Toast the bread on the coolest part of the griddle, usually the front edge. Thick Texas toast needs a little time for the heat to get into the middle.
Tip
Everything bagel seasoning on the inside of the toast, right on top of the mayo, is what makes this taste like more than a regular BLT. Don't skip it.
A hard-fried egg
