Directions

  1. Cook the turkey bacon until really crisp, then break it into pieces. Slice the chicken, chop the tomato and slice the avocado.
  2. Wash the lettuce leaves and pat them completely dry.
  3. Spread a thin layer of mayo on each leaf.
  4. Layer on the chicken, bacon, tomato and avocado.
  5. Fold the leaf around the filling like a taco, or eat them open-faced. Either way, eat them right away.
Notes These don't keep once assembled; the lettuce wilts and the avocado browns. Store the components separately and build them when you're hungry. Roughly 395 calories and 41 g protein per serving, give or take.

A club sandwich is three slices of toast holding up a very good filling. Take the toast away and the filling's still there. These lettuce wraps are chicken, bacon, tomato and avocado with a smear of mayo, and they come together in about the time it takes the bacon to cook.

Pick the right lettuce

The lettuce is doing the job of the bread, so it matters which one. Butter lettuce has soft, cupped leaves that fold easily. Romaine is sturdier and crunchier, but the ribs can snap. Iceberg is the crunchiest and holds together if you use the big outer leaves. Anything thinner than that tears when you pick it up.

Tip

Dry the leaves properly. Water on the lettuce keeps the mayo from sticking and turns the whole thing slippery.

Crispy bacon, really crispy

Turkey bacon never gets quite as crisp as pork, so give it longer than you think. You want it snapping, not bending. Limp bacon in a lettuce wrap just disappears.
