Peanut butter and jelly doesn't need to be improved. It just needs to be put on something warm. In this case, that's a plain vanilla mug cakeA single serving of cake batter cooked right in a mug or bowl in the microwave, usually in a minute or two. It won't brown like an oven cake, but it's done before you could preheat one.More: Protein Blueberry Muffins, Baked or Microwaved, and the result eats more like a sweet snack than a sensible breakfast. That's fine.
Ten seconds, not twenty
The one step that can go wrong is warming the peanut butter. Ten seconds turns it from a stiff spoonful into something you can drizzle. Twenty seconds and it's scorching hot, and a little longer than that it can start to scorch in the bowl. Go short and stir; you can always add five more.
Warm peanut butter soaks into the top of the muffin a little, and the cold jam on top of it is the whole contrast. Warm, salty, cold, sweet. Same reason a toasted PB&J beats a regular one.
Try this
If you want the peanut butter flavor all the way through, swirl a little into the batter before it goes in the microwave.
Pick your jam
Any jam works. Strawberry and grape are the classics; raspberry is a little sharper and cuts the richness. Sugar-free jam is fine here, and a tablespoon is plenty.
For more peanut butter, the PB Chocolate Cookies and the Chocolate and Peanut Butter Protein Shakes are both good places to go next.
Heads up
Peanut butter heats unevenly and holds heat. Stir it before you taste it.
