You'll need

  • Microwave-safe bowl
  • Fork or small whisk
  • Small bowl for the frosting

Directions

  1. Grease the bowl, then stir the protein powder, pancake mix and milk together until smooth.
  2. Microwave on high for about 90 seconds, until the center is cooked through.
  3. Let it cool slightly.

Frosting

  1. Stir the protein powder into the yogurt or blended cottage cheese until smooth. Add mashed berries for color if you like.
  2. Spread it over the top and eat it from the bowl.
Notes Unfrosted leftovers keep 2 to 3 days in the fridge; warm them for 15 to 20 seconds and frost them fresh.

Everything in this bowl depends on one thing: cake batter protein powder. With that, three ingredients and a microwave get you something that tastes a lot like a vanilla cupcake. Swirl on the yogurt frosting and it's a birthday-party breakfast.

The flavor is in the powder

There's no vanilla extract, no sprinkles, no butter. The cake batter flavor of the powder is doing all the work. Plain vanilla powder makes a perfectly good pancake bowl, but it won't taste like a cupcake. If you've got cake batter or birthday cake flavor, this is the recipe for it.

The extra milk, half a cup, keeps it soft and pancake-like rather than dense.

Tip

Blend the cottage cheese completely smooth before you make the frosting. A little lumpiness in the frosting reads as cottage cheese immediately.

Frosting the bowl

The frosting is protein powder stirred into Greek yogurt until it goes thick and sweet. Spread it on once the pancake has cooled for a couple of minutes, or it'll melt into a glaze. Mashed strawberries or raspberries turn it pink, which is purely for looks but doesn't hurt.

Note

Frost it only when you're about to eat it. Yogurt frosting doesn't hold up overnight on warm cake.
