- Heat the oven to 400°F and line a sheet pan with parchment.
- Mix the turkey, grated onion, seasonings and Worcestershire just until combined.
- Roll into meatballs and bake 15 to 20 minutes, until cooked through.
Pasta and sauce
- While they bake, boil the spaghetti until al dente and drain.
- Warm the marinara in a saucepan.
- Add the meatballs to the sauce and serve over the spaghetti, with Parmesan if you like.

Turkey meatballs have a reputation for being dry and a little sad. Two small choices fix most of that: grate the onion instead of dicing it, and stop mixing sooner than feels right. After that, the oven does the work while you boil the pasta.
Grate, don't chop
A box grater turns onion into a wet pulp that disappears into the meat. It adds moisture and flavor everywhere, where diced onion would just leave little crunchy pockets that make the meatballs fall apart. Grate it right over the bowl so you keep the juice.
Heads up
Mix with your hands and stop as soon as the seasonings are spread through. Overworked ground turkey turns dense and springy.
Bake, then sauce
