High-Protein Caesar Salad Wraps

- Half a pound of cooked protein makes four wraps.
- Toss the filling with dressing, Parmesan, lemon and crushed croutons.
- A whole romaine leaf goes in each wrap, not chopped lettuce.
- Store the filling, not the wraps. Croutons go soft fast.

Directions
- Cut or shred the cooked protein into bite-size pieces.
- In a bowl, stir together the protein, Caesar dressing, croutons, Parmesan, lemon juice, garlic powder and pepper until everything's coated.
- Lay a tortilla flat and put one big lettuce leaf on it. Spoon a quarter of the filling onto the lettuce.
- Fold in the sides, then roll it up snug, like a burrito.
- Repeat with the rest. Slice them in half on the diagonal and eat them right away.

A Caesar salad is basically already a sandwich filling. It's got creamy dressing, crunchy croutons, sharp Parmesan and cold crisp romaine. Roll it up with some chicken and you've got four lunches from one bowl.
Crush the croutons
Whole croutons in a wrap are a mess. They're too big, they roll out the end, and they poke holes in the tortilla. Halve or lightly crush them before they go in, and they mix into the filling like crunchy little bits of breading. They'll soften the longer they sit in dressing, which is why this is a wrap you eat soon after rolling.
Heads up
If you're making these ahead, leave the croutons out of the stored filling and stir them in right before you assemble.
One big leaf
Use a whole romaine leaf instead of chopped lettuce. It lines the tortilla, keeps the dressing away from the bread, and adds that snap you want from a Caesar. Lay it along the tortilla with the rib running the same way you'll roll.
