- One oat mix does double duty: 3/4 pressed in as the base, 1/4 crumbled on top.
- Microwave the strawberries 2 to 3 minutes until jammy before they go in.
- Bake at 375°F for 15 to 20 minutes, until golden and bubbling.
- Rolled oats, not instant. The texture is the point.

- Small oven-safe bowl or ramekin
- Microwave-safe bowl

Directions
Prep
- Heat the oven to 375°F and grease a small oven-safe bowl.
- Mix the oats, protein powder, 1 tablespoon sweetener and applesauce until it's evenly crumbly.
- Microwave the strawberries with the other tablespoon of sweetener for 2 to 3 minutes, until soft and jammy. Mash a little if you like.
Build and bake
- Press about 3/4 of the oat mix firmly into the bottom of the bowl.
- Spoon the strawberries over it.
- Scatter the rest of the oat mix loosely on top.
- Bake 15 to 20 minutes, until the top is golden and the filling bubbles.
- Let it cool a few minutes. Greek yogurt or whipped cream on top is a good idea.

A crumble is really just two textures: soft, hot fruit and a crunchy, toasty top. This one gets both from a single bowl of oat mix and one little ramekin, and the fruit gets a head start in the microwave so the oven only has to brown things.
Pre-cook the fruit
Raw strawberries need a long bake to break down, and a single-serve crumble would burn on top before that happens. A few minutes in the microwave gets them soft and syrupy first. The same quick-jam trick tops the Blueberry Scone Cookies.
Heads up
Microwaved berries bubble up hard. Use a bowl with some room in it, or you'll be cleaning strawberry off the turntable.
Press the bottom, sprinkle the top
The base needs to be packed down firmly so it holds together like a crust. The topping is the opposite: loose, rough clumps with gaps between them, so hot air can get in and toast the oats. If you pat the top flat it bakes into a lid instead of a crumble.
