  • Bowl
  • Whisk or fork
  • Serving cup or small bowl
  • Blender, if you're using cottage cheese

Directions

  1. If you're using cottage cheese, blend it until completely smooth.
  2. Mix the protein powder, cottage cheese or yogurt, pudding mix and cinnamon until smooth and thick.
  3. In a cup or small bowl, layer the protein pudding, then banana slices, then whipped cream, then wafers.
  4. Repeat if you have enough, finishing with whipped cream and wafers on top.
  5. Eat right away, or chill it briefly first.
Notes Best eaten as soon as it's assembled; the banana browns and the wafers soften in the fridge. Roughly 285 calories and 40 g protein per serving, give or take.

Banana cream pie is mostly pudding, banana and whipped cream with a crust underneath. Take away the crust and the baking, keep the rest, and you have this: a cup you can put together in the time it takes the kettle to boil.

The pudding mix trick

A single teaspoon of dry sugar-free pudding mix stirred into the protein base does two jobs. It adds a lot of banana-cream flavor for very little, and the starch in it thickens the yogurt or cottage cheese into something that actually feels like pudding. Tip

If you're using cottage cheese, blend it first. Unblended, the curds make the whole cup lumpy no matter how hard you stir.

Build it to eat it

This one doesn't wait well. Sliced banana turns brown within the hour and the wafers go soft. If you want to get ahead, make the protein pudding and keep it covered in the fridge, then slice the banana and assemble when you're ready.
