- Dip fast. Low-carb bread soaks up egg and falls apart.
- Medium heat, 2 to 4 minutes a side in butter.

- Non-stick skillet or griddle
Directions
- Cut each slice of bread into 2 or 3 sticks.
- Whisk the eggs, cream, cinnamon, sweetener and vanilla in a shallow dish.
- Heat a skillet or griddle over medium and melt in some butter.
- Dip each stick quickly, just enough to coat it. Don't let it soak.
- Cook 2 to 4 minutes per side, until golden, flipping carefully.
- Work in batches, adding butter as needed.
- Serve right away with syrup, butter, berries or whipped cream.

French toast is really a vehicle for egg, butter and cinnamon, and it isn't picky about the bread. Low-carb bread works fine as long as you respect how fragile it is. Cutting it into sticks makes it easier to flip and a lot better for dunking.
The quick dip
Regular French toast wants a good soak. Keto bread doesn't. It's softer and less sturdy, and if it sits in the egg it turns to mush before it ever reaches the pan. A quick dip, both sides, straight into the skillet. Bread that's a day or two old is even better, since it's a little drier and holds up to the custard.
Tip
Keep the heat at medium. Keto bread and cream both brown fast, and you want the egg cooked through before the outside goes dark.
Eat them hot
These don't hold. The crisp edges go soft within minutes, and the microwave only makes it worse. If you're cooking for more than one person, keep finished sticks on a rack in a warm oven while you work through the batch.
