Ingredients

You'll need

  • Skillet
  • 9x9 or 9x13 baking dish
  • Large bowl and whisk

Directions

  1. Heat the oven to 375°F and grease the baking dish.
  2. Cook the sausage in a skillet over medium until browned and cooked through, with the onion and garlic if using. Drain the grease.
  3. Beat the eggs well in a large bowl. Stir in the sausage and cheese, and season.
  4. Pour into the dish and spread the sausage and cheese out evenly.
  5. Bake 25 to 30 minutes, until set and golden on top.
  6. Let it cool 5 to 10 minutes before slicing.
Notes Covered in the fridge it keeps 3 to 4 days; reheat slices in the microwave or oven. Roughly 474 calories and 25 g protein per serving, give or take.

Sausage, eggs, cheese. It barely needs a recipe, but the few details here matter. Use whatever ground sausage you like, whether that's sage breakfast sausage, spicy Italian or turkey. The flavor of the whole dish is mostly whatever you pick.

Drain it well

Sausage throws off a lot of fat, and whatever stays in the pan ends up pooling on top of the casserole. After browning, tip the pan and spoon it off, or move the sausage to a paper towel-lined plate for a minute. Onion and garlic, if you're using them, cook in with the sausage so they're soft before they meet the eggs.

Tip

Spread the sausage and cheese out again after you pour. They tend to sink and bunch up in the middle, which leaves the corners as plain egg.

Pan size changes the timing

A 9x9 gives you a thick bake that may need the full 30 minutes. A 9x13 spreads it thinner and cooks faster, so start checking at 25. Golden on top and set in the center is the cue either way.
