  • Microwave-safe mug or bowl
  • Fork or small whisk
  • Serrated knife

Directions

  1. Grease the mug. Stir the protein powder, sweetener, pancake mix and milk together until smooth. Stir in a few of the raspberries if you like.
  2. Microwave on high for 60 to 90 seconds, until a toothpick in the center comes out clean.
  3. Let it cool until it's comfortable to handle, then turn it out onto a plate.

Assemble

  1. Slice the cake in half horizontally.
  2. Set the bottom half on a plate, add raspberries and a spoonful of whipped cream, then the top half.
  3. Finish with more raspberries and whipped cream and eat right away.
Notes Assembled, it doesn't keep. The plain cake keeps 1 to 2 days in the fridge; warm it briefly before layering if you like. Roughly 250 calories and 40 g protein per serving, give or take.

Shortcake is really about the stacking. Cake, berries, cream, cake, berries, cream. Do it with a mug cakeA single serving of cake batter cooked right in a mug or bowl in the microwave, usually in a minute or two. It won't brown like an oven cake, but it's done before you could preheat one.More: Protein Blueberry Muffins, Baked or Microwaved and you get the whole thing in about five minutes, sized for exactly one person.

Split it cleanly

The difference between a shortcake and a cake with fruit on it is the layer in the middle. Turn the cake out of the mug, lay it on its side and cut through it with a serrated knife using a gentle sawing motion. Don't press down.

Timing matters. Straight out of the microwave, the cake is too soft and tears instead of slicing. Give it a few minutes, until you can hold it comfortably.

Tip

Save the best-looking raspberries for the top. The squished ones go in the middle where nobody sees them.

Raspberries vs. strawberries

This is the same build as Strawberry Shortcake for One, just with raspberries. They're tarter and a bit more fragile, and they don't need slicing, so assembly is quicker. If you want raspberries without the layering, the Raspberry Coffee Cake in a Mug keeps things simpler.

Note

Frozen raspberries are fine inside the cake but look sad on top once they thaw. Use fresh ones for the layers if you can.
