  • Microwave-safe mug or bowl
  • Fork or small whisk
  • Serrated knife

Directions

Cake

  1. Grease the mug. Stir the protein powder, sweetener, pancake mix and milk together until smooth. Stir in a few of the strawberries if you want some inside the cake.
  2. Microwave on high for 60 to 90 seconds, until a toothpick in the center comes out clean.
  3. Let it cool until you can hold it comfortably, then turn it out.

Assemble

  1. Slice the cake in half horizontally.
  2. Top the bottom half with strawberries and whipped cream, then add the top half.
  3. Finish with more strawberries and whipped cream. Eat it right away.
Notes Best freshly assembled. The plain cake keeps up to 2 days in the fridge. Almond milk works if you want it dairy-free. Roughly 250 calories and 40 g protein per serving, give or take.

Of all the microwave cakes, this one feels the most finished. It's a split cake with strawberries and cream stacked in the middle and piled on top, and it looks like you went to more trouble than you did.

The berries are the recipe

The cake is just the delivery system. What makes it good is ripe, sweet strawberries, and this recipe shows off good berries more than almost anything else. Pale, crunchy winter strawberries will make it taste like a protein cake with fruit on it. Deep red ones make it shortcake.

If the berries are a little underwhelming, slice them a few minutes ahead and toss them with a pinch of sweetener. They'll give up some juice and soak into the cake when you layer it.

Tip

Let the cake cool before you slice it. Warm, it tears. Cool enough to hold, it cuts clean and the layers stack.

Heads up

Assemble it right before eating. Whipped cream and warm cake have maybe five minutes together before things start sliding.
