  • 6 to 8 oz of cooked protein, 2 oz of cheese, a pita and hummus.
  • 2 cups of vegetables you can eat raw.
  • Ten minutes, zero cooking, one plate to wash.
  • Swap in whatever's in the fridge. That's the whole idea.

Ingredients

You'll need

  • Large plate or platter
  • Knife and cutting board

Directions

  1. Slice or cube the cheese and protein. Wash and cut the vegetables into dippable pieces.
  2. Put the hummus in a small bowl, or a dollop, in the center of the plate.
  3. Arrange the protein, cheese, pita and vegetables around it.
  4. Eat it with your hands. Dip everything in the hummus.
Notes Nothing here needs to be made fresh, so the pieces can be prepped days ahead and kept separately in the fridge. Roughly 400 calories and 40 g protein per plate, give or take.

Some nights the stove is not happening. This plate is for those nights. It's a snack board scaled up to a meal: protein, cheese, bread, hummus and raw vegetables, arranged so it feels like you meant to do it this way.

Build around the hummus

Start with the dip in the middle of the plate and arrange everything else around it like spokes. It sounds fussy, but it's the difference between a grazing plate and a pile of leftovers. It also nudges you toward eating the vegetables, because they're the easiest thing to reach and dip.

Tip

Cut the vegetables into sticks and spears rather than chunks. They're easier to dip and they look like more.

What to put on it

The recipe is really a formula: a protein, a cheese, a bread, a dip, and a lot of vegetables. Deli turkey, leftover rotisserie chicken, a scoop of tuna salad or smoked salmon all work. Any sliceable cheese. Pita, lavashA big, thin, soft flatbread, usually sold in rectangular sheets. It's thinner than a tortilla and crisps up more like a cracker in the air fryer.More: Air Fryer Lavash Pizza Pockets or crackers. Hummus is the default, but a thick Greek yogurt dip does the same job.

If you want the same pieces in bowl form, the Greek Power Bowls are close to identical with a few more vegetables. And if you've got leftover salmon from Air Fryer Herbed Salmon and Veggies, it's a great protein for this plate cold.

Warm the pita for a few seconds in a dry pan if you have the energy. It's optional. So is having the energy.
